Mustard has a big bold flavor and it isn’t a flavor that everyone likes, but anyone who is serious
about BBQ should have mustard in their pantry. Below I will detail why I think it is a staple for any aspiring pitmaster.
Sauce of Gold:
Believe it or not there is a region of South Carolina where mustard is synonymous with BBQ sauce. The team at Serious Eats discusses all the regional BBQ styles here. I made this recipe from Chris Lilly in his [easyazon_link identifier=”0307408116″ locale=”US” tag=”backyardmov05-20″]Big Bob Gibson cookbook[/easyazon_link]a few years back. While I was a big fan, many others weren’t due to the bold mustard flavor, so that batch of sauce lasted quite a while. If you are trying to branch out, I recommend you give this sauce a try.
Delicious Glue:
Now I like my ribs dry, but even when I make my ribs wet, it is nice to start with a solid base layer of rub. The problem is that after you have washed and dried your ribs or Boston butt, the rub isn’t always keen on sticking to the meat. This is where an old pitmaster’s trick comes in handy and the real inspiration behind this post…you rub it with mustard. Here is the cool thing about mustard, it serves as an adhesive, adhering the rub to the meat, but it cooks off flavorless. That’s right, there isn’t even the slightest hint of that big bold mustard tasted once the meat comes of the pit! Because the mustard doesn’t leave any flavor behind, there isn’t any incentive to use an expensive mustard, feel free to use French’s or whatever cheap mustard you can
find.
