My wife and I were on the road back in January and visited Pappy’s Smokehouse in St. Louis, MO, review here. While we were there we picked up a bottle of their sauce that tasted so good on their ribs, to see if we could capture some of that magic at home. Pappy’s doesn’t sauce their ribs, they just make the sauce available at the table. I used the sauce on some grilled spare ribs that I made recently…I know…I know…grilling wasn’t my first choice, but I am currently in between houses so beggars can’t be choosers.
Consistency: This sauce has a very thick consistency. My sauce was at room temperature, tt will spread eventually, but it is going to take its sweet time doing it. Pappy’s BBQ sauce is great for coating meat, you don’t have to worry about it running off the sides when you apply it. The downside is that you will very quickly go through an entire bottle to coat a large piece of meat.
Flavor: Like Slayton’s Signature Sauce, this was another bold flavored sauce, albeit sweeter than Slayton’s. It would compliment pork or brisket wearing a spicy rub, quite nicely. It is probably a little too bold for chicken. Like I said, I grilled the ribs and this is where the sauce fell down a little for me. I don’t think it held up to the high heat very well, it was prone to burning, and the high temps seemed to change the flavor for the worse.
Where to buy: You can buy Pappy’s Original BBQ Sauce directly from their website. At just $6.00 a bottle this is a good one to have on hand.
Conclusion: 4/5, I took of a half point because of the issues with high heat. This sauce is definitely several cuts above what you will find on your grocery store shelves, but better suited for smoking than grilling.
