Beef Tenderloin on Himalayan Salt Plate Cook

We had company arriving and I wanted to make a special dinner for them, I was going to try the Lomo al trapo again

, so I asked my wife to buy a beef tenderloin.  Well, she brought home beef tenderloin steaks instead.  But as I always say, when life gives you lemons, make delicious filet mignon!  With a nice cut of meat like that, I want the beef flavor to come through, so I needed to season it delicately.  I thought this would be a perfect opportunity to try out the tips I had received on how to best use the salt plate.

I fired up the grill very early and put the salt plate on, by the time I was ready to cook the steaks, the [easyazon_link identifier=”B013T0EWBU” locale=”US” nw=”y” tag=”saltplate-20″]salt plate[/easyazon_link]was registering almost 600 degrees.  My last two cooks on the [easyazon_link identifier=”B013T0EWBU” locale=”US” nw=”y” tag=”saltplate-20″]salt plate[/easyazon_link] had resulted in overly salty meat.  The instructions said that high temperature cooks will impart less salt flavor, so I was hoping this would strike the right balance.  Like I said, I wanted to keep the flavors simple, so I seasoned with just a little bit of

ground pepper.  With the [easyazon_link identifier=”B013T0EWBU” locale=”US” nw=”y” tag=”backyardmov05-20″]salt plate[/easyazon_link] that hot, it put a beautiful sear on the steaks right away, a sear that rivaled my baking steel.  I did three minutes on each side and in hindsight the steaks could have benefited from an extra minute on either side, they would have been a perfect medium rare.

I followed up the steaks with asparagus spears tossed in olive oil with ground pepper.  Again, I omitted the salt because I was hoping the salt plate would impart some saltiness.  I lined the spears up on the salt plate and I was able to cook them perfectly!

However, both the steak and the asparagus needed salt!  At those temperatures the salt plate failed to pass along any salt flavor at all.  So it would appear that the

perfect temperature is somewhere between 450-600 degrees.  So it appears I am still standing somewhere on the learning curve for this particular accessory.  If
